Chocolate Mandel Bread

Ingredients:

2 cups sugar

1/2 lb unsalted margarine, softened

1/2 tsp salt

6 eggs

2 3/4 cups cake meal

1/4 cup potato starch

6 ounces chocolate chips (or good chocolate broken into pieces)

1 cup nuts chopped (optional)

1 tsp cinnamon mixed with 2 tsp sugar (to sprinkle on top)

1. Make Dough:  In a mixing bowl, cream sugar and margarine. Add eggs one at a time, beat. Sift together cake meal and potato starch. Fold into creamed mixture. Add chocolate chips (and nuts if using) and mix well.

2. Shape Dough: Form into 2 loaves about 2 inches wide. Sprinkle sugar and cinnamon on top if desired.

5.  Bake:  Preheat oven to 350. Bake on greased cookie sheet for 1 hour. (freeze well)
