Chocolate Truffles
/Ingredients:
8 oz 60-80% dark chocolate, chopped
2/3 heavy cream
1 Tbsp butter
1-2 tbsp liqueur (optional)
Toppings (chopped nuts, coconut, sprinkles)
1. Bring the heavy cream to a light boil in a saucepan, then remove from heat.
2. Add the chopped chocolate and butter. Let sit for 3 minutes.
3. Stir until smooth and creamy. Add liqueur if using.
4. Cover tightly and refrigerate until thickened, about 1 hour.
5. Roll the set truffle mixture into 1-2 tsp sized balls. Roll each ball into the toppings.
6. Cover and store in the refrigerator for up to 1 week. Serve and enjoy at room temperature.
