Charoset Truffles
/Ingredients:
1 1/2 cups pitted dates
1 1/2 cups dried apricots
1/2 cup dried cherries (or substitute dried cranberries or raisins)
3/4 cup shelled pistachios
2 tbsp honey
1/4 cup sugar
1 tsp cinnamon
1. Pulse in food Processor: Combine dates, apricots, cherries, and pistachios in the bowl of a food processor. Pulse together until mixture is coarsely combined. Ass the honey and process until the mixture forms a smooth, sticky paste.
2. Mix together cinnamon and sugar in a separate bowl.
3. Roll dough: Roll the dough, 1 heaping tablespoon at a time into a ball. roll the ball into the cinnamon sugar mixture to coat evenly.
4. Store in an airtight container.
